Ingredients
2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1 cup unsalted butter, softened
3/4 cup granulated sugar
1/4 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
1/4 cup granulated sugar (for rolling)
2 cups cold milk (for serving)
Instructions
Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
In a small bowl, whisk together flour and baking soda; set aside.
In a large bowl, beat butter, 3/4 cup granulated sugar, and brown sugar with an electric mixer until light and fluffy, about 3 minutes.
Add egg and vanilla; beat until combined.
Gradually add flour mixture, beating on low speed until just combined. Do not overmix.
Place 1/4 cup granulated sugar in a shallow bowl. Roll dough into 1-inch balls, then roll each ball in sugar to coat.
Place balls 2 inches apart on prepared baking sheets.
Bake for 10-12 minutes, until edges are lightly golden. Cool on baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
Serve cookies with a glass of cold milk for dipping.
Tips
For extra flavor, add 1/2 teaspoon of cinnamon to the sugar coating.
Store cookies in an airtight container at room temperature for up to 1 week.
