Ingredients
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup semisweet chocolate chips
1 pint (2 cups) ice cream, slightly softened
Instructions
Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper.
In a small bowl, whisk together flour, baking soda, and salt.
In a large bowl, beat butter, granulated sugar, and brown sugar with an electric mixer until light and fluffy, about 2 minutes. Add egg and vanilla; beat until combined.
Gradually add flour mixture to butter mixture, beating on low until just combined. Stir in chocolate chips.
Drop dough by rounded tablespoons (about 2 tablespoons each) onto prepared baking sheets, spacing 2 inches apart. Flatten slightly with your hand.
Bake 10-12 minutes until edges are golden and centers are set. Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
Place one cookie flat side up. Scoop about 1/4 cup ice cream onto cookie. Top with another cookie, flat side down, and press gently to spread ice cream to edges. Repeat with remaining cookies and ice cream.
Wrap each sandwich in plastic wrap and freeze for at least 2 hours before serving.
Tips
For easier assembly, freeze the baked cookies for 15 minutes before adding ice cream.
Roll the edges of the sandwich in mini chocolate chips, sprinkles, or crushed nuts after assembling.
Store in an airtight container in the freezer for up to 2 weeks.
