Ingredients
2 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup unsalted butter, softened
3/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 cups powdered sugar
2 tablespoons meringue powder
3-4 tablespoons water
Food coloring (assorted colors)
Sprinkles and edible decorations (optional)
Instructions
Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
In a medium bowl, whisk together flour, baking powder, and salt.
In a large bowl, beat butter and sugar with an electric mixer until light and fluffy. Add egg and vanilla; beat well.
Gradually add flour mixture to butter mixture, mixing until just combined. Divide dough in half, flatten into disks, wrap in plastic, and chill for at least 1 hour.
On a lightly floured surface, roll dough to 1/4-inch thickness. Cut into desired shapes using cookie cutters. Place on prepared baking sheets.
Bake for 8-12 minutes or until edges are lightly golden. Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
To make royal icing: In a large bowl, combine powdered sugar and meringue powder. Add water and beat with an electric mixer on low until combined, then on high for 5 minutes until stiff peaks form.
Divide icing into small bowls and tint with food coloring. Transfer to piping bags or small squeeze bottles. If needed, add water drop by drop to reach piping consistency (thick but flowy).
Decorate cooled cookies with icing and sprinkles as desired. Let icing set for at least 2 hours before packaging.
To assemble kits: Place undecorated cookies, icing bags, and decorations in a box or bag with instructions.
Tips
Store undecorated cookies in an airtight container for up to 1 week.
Royal icing can be made ahead and stored in the refrigerator for up to 2 weeks; stir well before using.
For a gluten-free version, substitute all-purpose flour with a 1:1 gluten-free baking flour.
