Ingredients
2 cups frozen mixed berries (or fresh)
1/4 cup granulated sugar
1 tablespoon lemon juice
1 teaspoon vanilla extract
1/4 cup water
Instructions
Combine berries, sugar, lemon juice, and water in a medium saucepan.
Bring to a simmer over medium heat, stirring occasionally.
Reduce heat to low and cook for 10-15 minutes, until berries have broken down and mixture has thickened slightly.
Remove from heat and stir in vanilla extract.
Let cool slightly before serving. Compote will thicken further as it cools.
