Colcannon is a traditional Irish mashed potato dish made with kale or cabbage and plenty of butter and cream. This version uses kale for a slightly earthy flavor.

Ingredients
2 pounds potatoes, peeled and quartered
1/2 pound kale, stems removed and leaves chopped
1/2 cup milk
4 tablespoons unsalted butter, plus more for serving
1/2 cup heavy cream
1 teaspoon salt
1/4 teaspoon black pepper
2 green onions, thinly sliced
Instructions
Place potatoes in a large pot and cover with cold salted water. Bring to a boil, then reduce heat and simmer until tender, about 15-20 minutes.
While potatoes cook, bring a small pot of salted water to a boil. Add kale and cook until wilted, about 3-4 minutes. Drain well and squeeze out excess water.
Warm milk, butter, and cream in a small saucepan over low heat until butter melts.
Drain potatoes and return to pot. Mash until smooth, then stir in the warm milk mixture, salt, and pepper.
Fold in the cooked kale and green onions. Serve hot with extra butter on top.
Tips
Use a potato ricer for extra smooth texture.
Leftovers can be pan-fried the next day as potato cakes.
