Ingredients
2 lbs pork ribs or chicken drumsticks/thighs
1 can (12 oz) cola (not diet)
1/2 cup ketchup
1/4 cup soy sauce
2 tablespoons brown sugar
1 tablespoon apple cider vinegar
2 cloves garlic, minced
1 teaspoon smoked paprika
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
Instructions
Preheat oven to 300°F (150°C). Line a baking sheet with foil and place a wire rack on top.
Pat ribs or chicken dry with paper towels. Season lightly with salt and pepper.
In a small bowl, whisk together cola, ketchup, soy sauce, brown sugar, vinegar, garlic, paprika, black pepper, and cayenne.
Place meat on the wire rack. Brush generously with the cola glaze. Reserve remaining glaze.
Bake for 1.5 to 2 hours (ribs) or 1 to 1.5 hours (chicken), basting with glaze every 30 minutes, until tender and caramelized.
For extra sticky glaze, during the last 15 minutes, increase oven temperature to 400°F (200°C) and brush with remaining glaze. Watch to prevent burning.
Let rest 5 minutes before serving. Brush with pan juices if desired.
Tips
For a thicker glaze, simmer the remaining glaze in a small saucepan over medium heat until reduced by half.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
This recipe works well on a grill: cook over indirect medium heat for similar times, basting frequently.
