  4. Return pork to the pot, nestling it into the liquid. Bring to a simmer, then cover and reduce heat to low. Cook for 2.5 to 3 hours, until pork is fork-tender and easily shreds.
  5. Remove pork from pot and shred using two forks. Meanwhile, bring the braising liquid to a boil and cook uncovered for 10-15 minutes until slightly thickened.
  6. Return shredded pork to the pot, stir to coat with sauce. Adjust seasoning with salt and pepper. Serve on buns or as desired.
