Ingredients
2 lbs pork shoulder, cut into 2-inch cubes
1 tbsp vegetable oil
1 large onion, sliced
4 cloves garlic, minced
1 tbsp grated fresh ginger
1/2 cup soy sauce
2 cups cola (not diet)
2 tbsp rice vinegar
1 star anise
1 cinnamon stick
2 green onions, sliced (for garnish)
Instructions
Heat oil in a large Dutch oven over medium-high heat. Brown pork in batches, about 4 minutes per side, then set aside.
Reduce heat to medium. Add onion and cook until softened, 5 minutes. Add garlic and ginger, cook 1 minute.
Return pork to pot. Add soy sauce, cola, rice vinegar, star anise, and cinnamon stick. Bring to a boil, then reduce to low, cover, and simmer for 1.5 hours, until pork is tender.
Remove lid and increase heat to medium-high. Simmer uncovered for 15-20 minutes, until sauce thickens and coats the pork.
Discard star anise and cinnamon stick. Taste and adjust seasoning with salt if needed. Garnish with green onions.
Tips
Use full-sugar cola for best caramelization; diet cola will not work.
This dish can be made ahead and reheated; flavors deepen overnight.
Serve over steamed rice or with crusty bread to soak up the sauce.
