Ingredients
1.5 lbs pork belly, skin on, cut into 2-inch cubes
1 tablespoon vegetable oil
4 cloves garlic, smashed
2 slices ginger (1/4 inch thick)
1/4 cup soy sauce
1/4 cup dark soy sauce
1 cup cola (not diet)
1/4 cup brown sugar
2 star anise
1 cinnamon stick
2 cups water
Instructions
1. Blanch pork belly in boiling water for 3 minutes to remove impurities. Drain and rinse.
2. Heat oil in a heavy pot over medium-high heat. Sear pork belly pieces until golden on all sides, about 5 minutes.
3. Add garlic and ginger; cook for 1 minute until fragrant.
4. Stir in soy sauces, cola, brown sugar, star anise, cinnamon, and water. Bring to a boil.
5. Reduce heat to low, cover, and simmer for 1.5 hours until pork is tender.
6. Uncover and increase heat to medium-high. Simmer for 15-20 minutes, stirring occasionally, until sauce thickens and glazes the pork.
7. Serve hot over steamed rice.
