Ingredients
1 cup granulated sugar
1/2 cup light corn syrup
1/4 cup water
1/4 cup unsalted butter, cut into pieces
1/2 teaspoon baking soda
1 teaspoon vanilla extract
1/2 cup roasted coffee beans, coarsely chopped
1/4 teaspoon salt
Instructions
Line a baking sheet with a silicone mat or parchment paper. Set aside.
In a heavy-bottomed saucepan, combine sugar, corn syrup, and water. Stir over medium heat until sugar dissolves.
Bring to a boil without stirring. Attach a candy thermometer and cook until mixture reaches 300°F (hard crack stage).
Remove from heat and immediately stir in butter until melted. Then quickly stir in baking soda, vanilla, coffee beans, and salt. The mixture will foam up.
Pour onto prepared baking sheet and spread into an even layer using a heatproof spatula. Let cool completely, about 30 minutes.
Break into pieces. Store in an airtight container at room temperature.
Tips
For a smoother brittle, use whole coffee beans instead of chopped.
