Ingredients
4 cod fillets (6 oz each)
2 tablespoons butter
1 shallot, finely chopped
1/2 cup dry white wine
1 cup heavy cream
2 tablespoons Dijon mustard
1 tablespoon whole-grain mustard
Salt and freshly ground black pepper to taste
1 tablespoon chopped fresh parsley for garnish
Instructions
Pat cod fillets dry with paper towels and season both sides with salt and pepper.
In a large skillet, melt butter over medium-high heat. Add cod fillets and cook until golden brown, about 3-4 minutes per side. Transfer to a plate and keep warm.
Reduce heat to medium. Add shallot to the skillet and cook until softened, about 1 minute.
Pour in white wine, scraping up any browned bits. Simmer until reduced by half, about 2 minutes.
Stir in heavy cream, Dijon mustard, and whole-grain mustard. Cook, stirring, until sauce thickens slightly, about 2-3 minutes.
Return cod fillets to the skillet, spoon sauce over them, and cook for 1 minute to heat through.
Serve immediately, garnished with parsley.

Substitute halibut or haddock for cod if desired.
