Ingredients
- 1 cup jasmine or long-grain rice
- 1 cup canned coconut milk
- 1 cup water
- 1 cup fresh or frozen corn kernels
- 1/2 teaspoon salt
- 1 tablespoon coconut oil or vegetable oil
- 1/2 teaspoon turmeric (optional, for color)
- 1 fresh red chili, sliced (optional, for heat)
Instructions
- Rinse the rice under cold water until the water runs clear. Drain well.
- In a medium saucepan, heat the oil over medium heat. Add the corn and sauté for 2 minutes.
- Add the rice, coconut milk, water, salt, and turmeric (if using). Stir to combine.
- Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until the liquid is absorbed and rice is tender.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork. Garnish with sliced chili if desired.
Tips
- For extra richness, use full-fat coconut milk.
- Leftover rice can be stored in the fridge for up to 3 days; reheat with a splash of water.
- Add a squeeze of lime juice before serving for brightness.
