Ingredients
- 8 oz (225g) dark chocolate (70% cocoa), finely chopped
- 1/2 cup (120ml) heavy cream
- 2 tbsp unsalted butter, softened
- 1 tsp vanilla extract
- 1/4 cup (30g) unsweetened cocoa powder, for dusting
Instructions
- Place chopped chocolate in a heatproof bowl. In a small saucepan, heat heavy cream over medium heat until it just begins to simmer (do not boil).
- Pour hot cream over chocolate. Let sit for 2 minutes, then stir until smooth. Add butter and vanilla, stir until fully incorporated.
- Cover bowl with plastic wrap and refrigerate for 1-2 hours until firm enough to scoop.
- Line a baking sheet with parchment paper. Using a small cookie scoop or teaspoon, scoop mixture and roll into 1-inch balls. Place on prepared sheet.
- Place cocoa powder in a shallow bowl. Roll each truffle in cocoa powder until coated. Transfer to a serving plate or airtight container.
- Refrigerate for at least 30 minutes before serving. Store in refrigerator for up to 2 weeks.
Tips
- For best flavor, use high-quality chocolate.
- If mixture is too soft to roll, chill longer. If too firm, let sit at room temperature briefly.
- Truffles can be rolled in finely chopped nuts, shredded coconut, or powdered sugar instead of cocoa.
