1 cup fresh mint leaves, packed
1 cup fresh ginger, peeled and sliced
1 cup fresh strawberries, hulled and halved
1 cup fresh lime juice (about 6 limes)
1 cup fresh lemon juice (about 4 lemons)
1 cup honey
Instructions
To make mint simple syrup: In a small saucepan, combine 1/2 cup water and 1/2 cup sugar. Bring to a boil, stirring until sugar dissolves. Remove from heat, add 1 cup mint leaves, and steep for 30 minutes. Strain and cool.
To make ginger syrup: In a small saucepan, combine 1/2 cup water, 1/2 cup sugar, and 1 cup sliced ginger. Bring to a boil, then simmer for 10 minutes. Remove from heat, let cool, then strain.
To make strawberry puree: In a blender, puree 1 cup strawberries until smooth. Strain through a fine-mesh sieve to remove seeds. Add 1 tablespoon sugar if desired and stir to dissolve.
To make citrus honey: In a small bowl, whisk together 1 cup lime juice, 1 cup lemon juice, and 1 cup honey until honey is fully dissolved.
Store each mixer in separate airtight containers in the refrigerator for up to 2 weeks.
Tips
Use these mixers as a base for cocktails: add 1-2 ounces per drink.
For mocktails, combine with sparkling water or soda.
Adjust sweetness to taste by adding more or less sugar/honey.
Ginger syrup can be made spicier by adding a pinch of cayenne.
