Ingredients
6 cups chopped romaine lettuce
2 cups cooked chicken breast, diced
4 slices bacon, cooked and crumbled
2 hard-boiled eggs, chopped
1 large tomato, seeded and diced
1 avocado, diced
1/2 cup crumbled blue cheese
1/4 cup chopped fresh chives
1/2 cup red wine vinaigrette (or your favorite dressing)
Instructions
Arrange the chopped romaine lettuce on a large platter or in a wide bowl.
In rows across the lettuce, place the diced chicken, crumbled bacon, chopped eggs, diced tomato, diced avocado, and crumbled blue cheese.
Sprinkle the chopped chives over the top.
Serve immediately with red wine vinaigrette on the side, or drizzle dressing over the salad just before serving.
To serve, toss the salad at the table or allow each person to take portions from the rows.
Tips
For a vegetarian version, omit the chicken and bacon and add extra avocado and hard-boiled eggs.
The salad can be assembled up to 2 hours ahead, but add avocado and dressing just before serving to prevent browning.
Leftover salad (without dressing) keeps refrigerated for up to 1 day.
