1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
4 large eggs, room temperature
2 teaspoons vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup milk, room temperature
Instructions
Preheat oven to 325°F (165°C). Grease and flour a 9x5-inch loaf pan.
In a large bowl, cream butter and sugar together until light and fluffy, about 3-4 minutes.
Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
In a separate bowl, whisk together flour, baking powder, and salt.
Gradually add dry ingredients to the butter mixture, alternating with milk, beginning and ending with flour. Mix until just combined; do not overmix.
Pour batter into prepared pan and smooth the top.
Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
Cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.

For extra flavor, add 1 tablespoon of vanilla bean paste or the seeds from one vanilla bean.
