Ingredients
2 slices sourdough or whole wheat bread
2 teaspoons mayonnaise
1 teaspoon Dijon mustard
3 ounces sliced roasted turkey breast
1 slice Swiss or cheddar cheese
2 leaves lettuce (e.g., romaine or iceberg)
2 slices tomato (optional)
Instructions
Spread mayonnaise on one side of each bread slice and mustard on the other side.
Layer turkey, cheese, lettuce, and tomato (if using) on one slice of bread.
Top with the second bread slice, mayonnaise side down.
Heat a non-stick skillet or griddle over medium heat. Place sandwich in the skillet and cook until golden brown on the bottom, about 2-3 minutes.
Flip carefully and cook until the other side is golden brown and cheese is melted, about 2-3 minutes more.
Remove from heat, slice diagonally, and serve immediately.
Tips
For extra flavor, add a few slices of avocado or a sprinkle of salt and pepper.
To melt cheese faster, cover the skillet with a lid while cooking.
Serve with a side of chips, pickle spear, or a small salad.
