Ingredients
1 9-inch unbaked pie crust (homemade or store-bought)
Preheat oven to 350°F (175°C). Place pie crust in a 9-inch pie dish and crimp edges.
In a large bowl, combine mashed sweet potatoes and melted butter. Stir in granulated sugar and brown sugar until smooth.
Beat in eggs one at a time, then add vanilla extract.
Mix in cinnamon, nutmeg, ginger, and salt. Gradually stir in evaporated milk until well combined.
Pour filling into prepared pie crust.
Bake for 50-55 minutes, or until center is set and a knife inserted near the center comes out clean. If crust edges brown too quickly, cover with foil or a pie shield.
Cool completely on a wire rack before slicing. Serve at room temperature or chilled.
Tips
For deeper flavor, roast sweet potatoes instead of boiling them.
Store leftovers covered in the refrigerator for up to 4 days.
Serve with whipped cream or a scoop of vanilla ice cream.
