Ingredients
4 hoagie rolls (about 8 inches each)
1 pound thinly sliced deli roast beef
8 slices provolone cheese
2 cups shredded iceberg lettuce
1 large tomato, thinly sliced
1/2 red onion, thinly sliced
1/2 cup mayonnaise
2 tablespoons prepared horseradish
1 tablespoon Dijon mustard
Salt and black pepper to taste
Instructions
Preheat oven to 350°F. Split hoagie rolls open and place on a baking sheet. Toast in oven for 3-4 minutes until lightly crisp.
In a small bowl, combine mayonnaise, horseradish, and Dijon mustard. Season with salt and pepper to taste.
Spread the horseradish mayo mixture on both sides of each toasted roll.
Layer 2 slices of provolone on the bottom half of each roll. Divide roast beef evenly among the subs, piling it high.
Top with shredded lettuce, tomato slices, and red onion slices. Close the subs and serve immediately.
Tips
For a warm sub, place assembled subs (without lettuce and tomato) under the broiler for 1-2 minutes until cheese melts, then add cold toppings.
Substitute provolone with Swiss or cheddar if desired.
Store leftover components separately; assemble just before serving to keep bread from getting soggy.
