Ingredients
1/2 cup small tapioca pearls (boba)
4 cups water (for boiling boba)
2 tablespoons brown sugar (for boba syrup)
2 tablespoons water (for boba syrup)
2 cups water (for tea)
4 black tea bags (or 2 tablespoons loose-leaf black tea)
1/2 cup whole milk (or evaporated milk for richer taste)
2-3 tablespoons sugar (adjust to taste)
ice cubes
Instructions
Bring 4 cups of water to a boil in a pot. Add tapioca pearls and stir gently. Boil for 15-20 minutes until pearls are translucent and chewy, stirring occasionally. Remove from heat, cover, and let sit for 5 minutes.
Drain the pearls and rinse with cold water. In a small bowl, mix 2 tablespoons brown sugar with 2 tablespoons water to dissolve. Add the cooked pearls and let them soak in the syrup while preparing the tea.
In a separate pot, bring 2 cups of water to a boil. Remove from heat, add tea bags, and steep for 5-7 minutes. Remove tea bags and stir in sugar until dissolved. Let the tea cool to room temperature.
Fill two glasses with ice cubes. Divide the tapioca pearls and syrup between the glasses.
Pour the cooled tea over the pearls, filling each glass about 2/3 full.
Add milk to each glass, stir well, and serve immediately with a wide straw.
Tips
For a dairy-free version, substitute whole milk with oat milk or coconut milk.
Adjust sweetness by varying the amount of sugar in the tea or the syrup.
Cooked tapioca pearls are best consumed within a few hours; they harden when refrigerated.
