Ingredients
1/2 cup granulated sugar
1/4 cup unsweetened cocoa powder
3 tablespoons cornstarch
1/4 teaspoon salt
2 3/4 cups whole milk
2 large egg yolks
1 teaspoon vanilla extract
2 tablespoons unsalted butter, cut into pieces
Instructions
In a medium saucepan, whisk together sugar, cocoa powder, cornstarch, and salt. Gradually whisk in milk until smooth.
Place the saucepan over medium heat and cook, stirring constantly with a whisk, until the mixture thickens and comes to a gentle boil, about 5-7 minutes.
In a small bowl, lightly beat the egg yolks. Gradually whisk about 1 cup of the hot milk mixture into the yolks to temper them.
Pour the egg mixture back into the saucepan, whisking constantly. Continue to cook over medium heat, stirring, until the pudding thickens and bubbles appear, about 2 minutes more.
Remove from heat and stir in vanilla extract and butter until butter is melted and fully incorporated.
Pour the pudding through a fine-mesh strainer into a bowl to remove any lumps. Divide among serving dishes.
Press plastic wrap directly onto the surface of each pudding to prevent a skin from forming. Refrigerate until chilled, at least 2 hours or overnight.

For a dairy-free version, substitute whole milk with full-fat coconut milk and use vegan butter.
