Ingredients
2 boneless skinless chicken breasts (about 6 oz each)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1 tablespoon olive oil
6 slices bacon
6 slices white or whole wheat bread, toasted
3 tablespoons mayonnaise
4 lettuce leaves (iceberg or romaine)
1 large tomato, sliced into 8 rounds
Instructions
Season chicken breasts with salt, pepper, and garlic powder. Heat olive oil in a skillet over medium-high heat. Cook chicken for 5-7 minutes per side until golden and cooked through (internal temp 165°F). Let rest 5 minutes, then slice into strips.
Cook bacon in a separate skillet until crispy. Drain on paper towels.
Spread mayonnaise on one side of each toast slice. On a plate, layer one slice of bread (mayo side up), then lettuce, 2 tomato slices, half the chicken strips, and 3 bacon strips. Top with second bread slice (mayo side up), repeat layering with remaining lettuce, tomato, chicken, and bacon. Finish with third bread slice (mayo side down).
Secure with toothpicks and cut diagonally into halves or quarters. Serve immediately.
