4 tbsp unsalted butter
1/4 cup all-purpose flour
3 cups whole milk
1 cup heavy cream
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1/4 tsp garlic powder
3 cups shredded sharp cheddar cheese
1 cup shredded Gruyère cheese
1/2 cup panko breadcrumbs
2 tbsp melted butter
Instructions
Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
Cook macaroni according to package directions until al dente. Drain and set aside.
In a large saucepan, melt 4 tbsp butter over medium heat. Whisk in flour and cook for 1 minute, stirring constantly.
Gradually whisk in milk and cream. Cook, stirring frequently, until sauce thickens, about 5 minutes.
Remove from heat. Stir in salt, pepper, paprika, garlic powder, cheddar, and Gruyère until melted and smooth.
Add cooked macaroni to the cheese sauce and stir to coat. Pour into prepared baking dish.
In a small bowl, mix panko with 2 tbsp melted butter. Sprinkle evenly over macaroni.
Bake for 20-25 minutes until bubbly and golden brown. Let rest 5 minutes before serving.
Tips
For extra flavor, add 1/2 tsp dry mustard or a dash of hot sauce to the cheese sauce.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
To make ahead, assemble without breadcrumbs, cover, and refrigerate. Add breadcrumbs and bake before serving.
