  2. Heat olive oil in a large Dutch oven over medium-high heat. Sear the roast on all sides until deeply browned, about 4-5 minutes per side. Remove roast and set aside.
  3. Reduce heat to medium. Add onion and cook until softened, about 5 minutes. Add garlic and tomato paste; cook 1 minute.
  4. Pour in beef broth and red wine (if using), scraping up any browned bits from the bottom. Add bay leaves and thyme.
  5. Return the roast to the pot. Bring to a simmer, then cover and transfer to a preheated 325°F oven. Cook for 2 hours.
  6. After 2 hours, add carrots, celery, and potatoes around the roast. Cover and continue cooking for 1 to 1.5 hours, until meat is fork-tender and vegetables are soft.
  7. Remove roast and vegetables to a platter; tent with foil. Discard bay leaves. If desired, thicken the cooking liquid: place pot over medium heat, stir in cornstarch slurry, and simmer until thickened. Season gravy with salt and pepper to taste.
  8. Slice or shred the roast. Serve with vegetables and gravy.
