- For the glaze: 1/4 cup ketchup, 2 tbsp brown sugar, 1 tbsp apple cider vinegar
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with foil or lightly grease a loaf pan.
- In a large bowl, combine breadcrumbs and milk; let sit for 5 minutes until absorbed.
- Add ground beef, onion, 1/4 cup ketchup, eggs, garlic, salt, pepper, and thyme. Mix gently until just combined.
- Shape the mixture into a loaf on the prepared baking sheet or press into the loaf pan.
- In a small bowl, whisk together glaze ingredients: 1/4 cup ketchup, brown sugar, and vinegar. Spread half over the meatloaf.
- Bake for 45 minutes, then spread remaining glaze on top. Continue baking for 15 minutes or until internal temperature reaches 160°F (71°C).
- Let rest for 10 minutes before slicing.
