4 large eggs
2 tablespoons whole milk

6 slices bacon
2 medium russet potatoes, peeled and shredded
1 small onion, finely chopped

4 slices white bread

Instructions
Cook bacon in a large skillet over medium heat until crispy, about 8 minutes. Transfer to paper towels to drain.
Meanwhile, place shredded potatoes in a clean kitchen towel and squeeze out excess moisture. In a bowl, mix potatoes with onion, salt, and pepper.
In the same skillet, discard all but 2 tablespoons bacon fat. Add vegetable oil and heat over medium-high. Spread potato mixture in an even layer and cook until golden brown and crispy, about 5-7 minutes per side. Transfer to a plate.
In a small bowl, whisk eggs, milk, salt, and pepper until frothy. In a nonstick skillet, melt 2 tablespoons butter over medium heat. Pour in eggs and cook, stirring gently with a spatula, until just set but still creamy, about 3-4 minutes. Remove from heat.
Toast bread slices and spread with softened butter.
