4 slices thick-cut bacon
4 large eggs
2 tablespoons milk
2 tablespoons unsalted butter
Salt and black pepper to taste
2 medium russet potatoes, peeled and shredded
2 tablespoons vegetable oil
2 slices white or whole wheat bread
Ketchup or hot sauce for serving (optional)
Instructions
Cook bacon: In a large skillet over medium heat, cook bacon until crispy, about 4-5 minutes per side. Transfer to paper towels to drain.
Make hash browns: Squeeze excess moisture from shredded potatoes. In the same skillet with bacon fat, add vegetable oil and heat over medium-high. Spread potatoes in an even layer, pressing down. Cook until golden brown on bottom, about 5 minutes. Flip and cook until golden on other side, about 4 minutes. Season with salt and pepper.
Scramble eggs: In a bowl, whisk eggs with milk, salt, and pepper. In a nonstick skillet over medium-low heat, melt butter. Pour in eggs and cook, stirring gently with a spatula, until softly set, about 3-4 minutes. Remove from heat.
Toast bread: Toast bread slices until golden.
Assemble platters: Divide hash browns between two plates. Top each with half the scrambled eggs, 2 slices bacon, and 1 slice toast. Serve immediately with ketchup or hot sauce if desired.
