Ingredients
1 cup long-grain white rice
2 cups water
1 tablespoon unsalted butter or vegetable oil
1 teaspoon salt
1/4 cup fresh lime juice (about 2 limes)
1/2 cup chopped fresh cilantro
1 teaspoon lime zest (optional)
Instructions
Rinse the rice in a fine-mesh strainer under cold water until the water runs clear. Drain well.
In a medium saucepan, combine the rinsed rice, water, butter or oil, and salt. Bring to a boil over high heat.
Reduce heat to low, cover, and simmer for 15-18 minutes, or until the rice is tender and the liquid is absorbed.
Remove from heat and let stand, covered, for 5 minutes.
Fluff the rice with a fork. Drizzle the lime juice over the rice and sprinkle with chopped cilantro and lime zest (if using). Gently fold to combine. Serve warm.
Tips
For best results, use freshly squeezed lime juice.
To make ahead, prepare rice without cilantro and lime, then add them just before serving.
