Ingredients
8 oz dried chow mein noodles or 12 oz fresh
2 tbsp vegetable oil
2 cloves garlic, minced
1 tsp grated fresh ginger
1 cup shredded cabbage
1 cup julienned carrots
1 cup sliced bell peppers
1/2 cup sliced mushrooms
3 green onions, sliced
2 tbsp soy sauce
1 tbsp oyster sauce
1 tsp sesame oil
1/2 cup chicken or vegetable broth
1 tbsp cornstarch mixed with 2 tbsp water
Instructions
Cook noodles according to package directions until al dente. Drain and rinse under cold water. Toss with 1 tsp oil to prevent sticking.
In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, broth, and cornstarch slurry. Set aside.
Heat 1 tbsp oil in a wok or large skillet over high heat. Add noodles and cook undisturbed for 2-3 minutes until crispy on one side. Flip and cook 1-2 minutes more. Transfer to a plate.
Add remaining 1 tbsp oil to the wok. Stir-fry garlic and ginger for 30 seconds. Add cabbage, carrots, bell peppers, and mushrooms. Cook 2-3 minutes until tender-crisp.
Return noodles to the wok. Pour sauce over everything and toss to combine. Cook 1 minute until sauce thickens. Garnish with green onions and serve immediately.
Tips
For extra protein, add cooked chicken, shrimp, or tofu.
Adjust sauce to taste: add more soy sauce for saltiness or a pinch of sugar for sweetness.
Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in a skillet.
