Ingredients
1 lb fresh chorizo (casings removed if in links)
8 small corn tortillas
1/2 cup chopped fresh cilantro
1/2 cup finely diced white onion
1 lime, cut into wedges
1/2 cup crumbled queso fresco (optional)
Salsa verde or your favorite salsa for serving
Instructions
Heat a large skillet over medium-high heat. Add the chorizo and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes.
While the chorizo cooks, warm the tortillas: either in a dry skillet over medium heat for about 30 seconds per side, or wrapped in foil in a 350°F oven for 5 minutes.
Assemble the tacos: place a generous spoonful of chorizo on each tortilla. Top with cilantro, onion, and queso fresco if using. Serve with lime wedges and salsa.
