Ingredients
1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 cup granulated sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup plain yogurt
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1/2 cup chocolate chips (optional)
Instructions
Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well.
In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, and salt.
In a separate bowl, whisk together yogurt, oil, eggs, and vanilla until smooth.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; batter will be thick. Fold in chocolate chips if using.
Divide batter evenly among the muffin cups, filling each about 2/3 full.
Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
