Ingredients
2 cups whole milk
1 cup heavy cream
3/4 cup granulated sugar
1/4 cup unsweetened cocoa powder
4 large egg yolks
1/4 teaspoon salt
1 teaspoon vanilla extract
6 waffle cones
Instructions
In a medium saucepan, whisk together milk, cream, sugar, cocoa powder, and salt. Heat over medium heat, stirring occasionally, until mixture is hot and sugar is dissolved, about 5 minutes. Do not boil.
In a separate bowl, whisk egg yolks. Slowly pour about 1 cup of the hot milk mixture into the yolks, whisking constantly to temper them.
Pour the egg mixture back into the saucepan and cook over medium-low heat, stirring constantly with a wooden spoon, until the custard thickens enough to coat the back of the spoon, about 5 minutes. Do not let it boil.
Remove from heat and stir in vanilla extract. Strain the custard through a fine-mesh sieve into a bowl. Let cool to room temperature, then cover and refrigerate until completely chilled, at least 4 hours or overnight.
Churn the chilled custard in an ice cream maker according to manufacturer's instructions until it reaches a soft-serve consistency.
Serve immediately in waffle cones, or transfer to a container and freeze for up to 2 hours for a firmer texture.
Tips
For a richer flavor, use dark cocoa powder.
If you don't have an ice cream maker, you can freeze the custard in a shallow pan, stirring every 30 minutes until it reaches soft-serve consistency.
Store leftover soft serve in an airtight container in the freezer; let it soften slightly at room temperature before serving.
