Ingredients
2 cups all-purpose flour
2 cups granulated sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup buttermilk
2 large eggs
1 teaspoon vanilla extract
1 cup unsalted butter
1/2 cup unsweetened cocoa powder
1 cup boiling water
1/2 cup unsalted butter
1/3 cup unsweetened cocoa powder
1/3 cup milk
3 1/2 cups powdered sugar
1 teaspoon vanilla extract
1/2 cup chopped pecans or walnuts (optional)
Instructions
Preheat oven to 350°F (175°C). Grease and flour a 13x9-inch baking pan.
In a large bowl, whisk together flour, sugar, baking soda, and salt.
In a separate bowl, combine buttermilk, eggs, and 1 teaspoon vanilla; set aside.
In a medium saucepan, melt 1 cup butter over medium heat. Stir in 1/2 cup cocoa powder until smooth. Remove from heat and stir in boiling water.
Pour the hot cocoa mixture into the flour mixture and stir until just combined. Add the buttermilk mixture and stir until smooth. Pour batter into prepared pan.
Bake for 20-25 minutes, or until a toothpick inserted in center comes out clean. Cool completely on a wire rack.
For the frosting: In a medium saucepan, melt 1/2 cup butter over medium heat. Stir in 1/3 cup cocoa powder and milk. Bring to a boil, then remove from heat.
Beat in powdered sugar and 1 teaspoon vanilla until smooth. If too thick, add a little more milk. Stir in nuts if using.
Pour warm frosting over cooled cake and spread evenly. Let frosting set before serving.
Tips
For a richer flavor, use dark cocoa powder.
