Ingredients
1 cup creamy peanut butter
1/2 cup honey or maple syrup
2 cups rolled oats
1/2 cup dark chocolate chips
1 tablespoon coconut oil
Instructions
In a medium saucepan over low heat, combine peanut butter and honey. Stir until melted and smooth.
Remove from heat and stir in rolled oats until fully coated.
Press the oat mixture firmly into an 8x8-inch baking dish lined with parchment paper.
In a small microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until melted and smooth.
Pour the melted chocolate over the oat layer and spread evenly.
