1 1/4 cups chocolate milk
1 large egg
3 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1/2 cup chocolate chips (optional)
Instructions
In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt.
In a separate bowl, whisk together chocolate milk, egg, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay. Fold in chocolate chips if using.
Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.
Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
Flip and cook for another 1-2 minutes until cooked through. Repeat with remaining batter.
