Ingredients
1 cup (6 oz) dark or milk chocolate chips
1 tablespoon coconut oil or vegetable shortening
12 lollipop sticks
Optional toppings: sprinkles, crushed nuts, shredded coconut, sea salt
Instructions
Line a baking sheet with parchment paper.
In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring after each, until melted and smooth.
Place a lollipop stick on the parchment paper. Spoon about 1 tablespoon of melted chocolate onto the end of the stick, forming a round lollipop shape. Repeat with remaining sticks, spacing them apart.
While the chocolate is still wet, sprinkle with desired toppings.
Refrigerate for at least 30 minutes until set. Gently peel off parchment paper. Serve or store in an airtight container in the refrigerator.
Tips
For a smoother finish, use a lollipop mold instead of free-forming.

To make white chocolate lollipops, substitute white chocolate chips and omit coconut oil if desired.
