Ingredients
1 cup unsalted butter, softened
2/3 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
1 1/2 cups powdered sugar
3 tablespoons unsweetened cocoa powder
3 tablespoons milk
1 teaspoon vanilla extract
Instructions
Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
In a large bowl, beat butter and granulated sugar with an electric mixer until light and fluffy, about 3 minutes. Beat in egg and 1 teaspoon vanilla.
In a separate bowl, whisk flour and salt. Gradually add to butter mixture, mixing until just combined.
Roll dough into 1-inch balls and place 2 inches apart on prepared baking sheets. Flatten slightly with a glass or fork.
Bake 10-12 minutes until edges are lightly golden. Cool on baking sheets 2 minutes, then transfer to wire racks to cool completely.
For icing: In a medium bowl, whisk powdered sugar, cocoa powder, milk, and 1 teaspoon vanilla until smooth. Dip tops of cooled cookies into icing, allowing excess to drip off. Place on wire rack to set.
Tips
For a thicker icing, add more powdered sugar; for thinner, add more milk.
Store cookies in an airtight container at room temperature for up to 1 week.
Decorate with sprinkles before icing sets if desired.
