Ingredients
2 cups plain Greek yogurt (full-fat or 2%)
1/4 cup honey or maple syrup
1/2 cup dark chocolate chips (60-70% cacao)
1 tablespoon coconut oil
1/4 cup chopped nuts (almonds or pistachios)
1/4 cup dried cherries or cranberries
Flaky sea salt for sprinkling
Instructions
Line a baking sheet with parchment paper.
In a medium bowl, whisk together Greek yogurt and honey until smooth.
Spread the yogurt mixture evenly onto the prepared baking sheet into a rectangle about 1/4-inch thick.
In a small microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until melted and smooth.
Drizzle the melted chocolate over the yogurt mixture. Use a knife or spatula to swirl the chocolate into the yogurt.
Sprinkle chopped nuts and dried fruit evenly over the top. Finish with a pinch of flaky sea salt.
Place the baking sheet in the freezer for at least 3 hours, or until completely frozen.
Once frozen, break the bark into irregular pieces. Serve immediately or store in an airtight container in the freezer.
