Ingredients
1/2 cup unsalted butter, softened
1/2 cup creamy peanut butter
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
8 ounces semisweet chocolate, chopped
1 tablespoon coconut oil or vegetable shortening
Instructions
Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
In a large bowl, beat butter, peanut butter, granulated sugar, and brown sugar with an electric mixer until light and fluffy, about 2 minutes. Add egg and vanilla; beat until combined.
In a separate bowl, whisk flour, baking soda, and salt. Gradually add to butter mixture, mixing until just combined. Do not overmix.
Roll dough into 1-inch balls and place 2 inches apart on prepared baking sheets. Flatten each ball with a fork in a crisscross pattern.
Bake for 10-12 minutes, until edges are lightly golden. Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
In a microwave-safe bowl, combine chocolate and coconut oil. Microwave in 30-second intervals, stirring after each, until melted and smooth.
Dip half of each cooled cookie into the melted chocolate, allowing excess to drip off. Place on parchment-lined baking sheet. Refrigerate for 15 minutes or until chocolate is set.
Tips
For a crunchier texture, use chunky peanut butter.
Store cookies in an airtight container at room temperature for up to 5 days.
If chocolate is too thick, add a little more coconut oil to thin it out.
