Ingredients
2 cups vanilla ice cream, softened
1 cup semisweet chocolate chips
2 tablespoons coconut oil
1/4 cup crushed peanuts or sprinkles (optional)
Instructions
Line a small baking sheet with parchment paper. Scoop 6 equal portions of softened ice cream onto the sheet, shaping each into a bar about 4 inches long and 1 inch wide. Insert a popsicle stick into each bar. Freeze for at least 2 hours until solid.
In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring each time, until melted and smooth. Let cool slightly.
Remove ice cream bars from freezer. Working quickly, dip each bar into the melted chocolate, turning to coat evenly. Let excess drip off. If using, immediately sprinkle with crushed peanuts or sprinkles.
Place coated bars back on the parchment-lined sheet. Freeze for at least 30 minutes until chocolate is set. Serve immediately or store in an airtight container in the freezer.
Tips
For a thicker chocolate coating, let the first layer set in the freezer for 10 minutes, then dip again.
