2 cups water
1 lime, juiced
1/4 cup chopped fresh cilantro
1 can (15 oz) black beans, drained and rinsed
1 cup frozen corn, thawed
1/4 cup chopped red onion
1/4 cup chopped fresh cilantro
1/2 cup sour cream
2 tbsp mayonnaise
1 tbsp lime juice
1 chipotle pepper in adobo sauce, minced
1/2 tsp garlic powder
Salt to taste
1 avocado, sliced
1/2 cup shredded lettuce
1/4 cup crumbled queso fresco (optional)
Instructions
Marinate chicken: In a bowl, mix olive oil, chipotle powder, cumin, garlic powder, onion powder, smoked paprika, and salt. Coat chicken breasts and let sit 10 minutes.
Cook rice: In a saucepan, bring rice and water to a boil. Reduce heat, cover, and simmer 15 minutes. Remove from heat, let stand 5 minutes, then fluff with fork. Stir in lime juice and 1/4 cup cilantro.
Grill chicken: Preheat grill or grill pan over medium-high heat. Cook chicken 6-7 minutes per side until internal temp reaches 165°F. Let rest 5 minutes, then slice.
