Ingredients
1 lb boneless skinless chicken thighs
2 chipotle peppers in adobo sauce, minced
1 tbsp adobo sauce
2 cloves garlic, minced
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
1 cup long-grain white rice
2 cups water
1 lime, juiced and zested
1/4 cup chopped fresh cilantro
1 can (15 oz) black beans, drained and rinsed
1 cup frozen corn, thawed
1/4 cup diced red onion
1/4 cup diced tomato
1 avocado, sliced
Instructions
Marinate chicken: In a bowl, combine chipotle peppers, adobo sauce, garlic, cumin, smoked paprika, salt, pepper, and olive oil. Add chicken and coat well. Let marinate 15 minutes.
Cook rice: Rinse rice. In a saucepan, bring rice and water to a boil. Reduce heat to low, cover, and simmer 15 minutes. Remove from heat, let stand 5 minutes. Fluff with fork, stir in lime juice, zest, and cilantro.
Cook chicken: Grill or pan-sear chicken over medium-high heat for 5-6 minutes per side, until internal temp reaches 165°F. Let rest 5 minutes, then slice.
Prepare corn salsa: In a small bowl, combine corn, red onion, and tomato. Season with salt and pepper.
Assemble bowls: Divide rice among 4 bowls. Top with black beans, sliced chicken, corn salsa, and avocado slices.
Serve with lime wedges if desired.
Tips
For extra heat, add more chipotle peppers.
Store leftovers separately and reheat chicken and rice before assembling.
