- 3 large eggs
- 1/4 teaspoon salt
- 1/2 teaspoon sesame oil
- 2 tablespoons vegetable oil, divided
- 2 medium tomatoes (about 300g), cut into wedges
- 1/2 teaspoon sugar
- 1 tablespoon ketchup
- 1/2 cup water
- 1 teaspoon cornstarch mixed with 2 teaspoons water (slurry)
- 2 green onions, sliced (optional)
Instructions
- Crack eggs into a bowl, add salt and sesame oil, beat well.
- Heat 1 tablespoon oil in a wok or skillet over high heat. Pour in eggs, scramble until just set but still moist. Remove and set aside.
- Add remaining 1 tablespoon oil to the wok. Add tomato wedges and stir-fry for 1 minute until slightly softened.
