Ingredients
1 tablespoon olive oil
1 pound ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 green bell pepper, chopped
2 tablespoons chili powder
1 teaspoon ground cumin
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 can (14.5 oz) diced tomatoes, undrained
1 can (8 oz) tomato sauce
1 can (15 oz) kidney beans, drained and rinsed
2 cups elbow macaroni
2 cups beef broth
1 cup shredded cheddar cheese
Instructions
Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon, about 5 minutes. Drain excess fat.
Add onion, garlic, and bell pepper; cook until softened, about 3 minutes.
Stir in chili powder, cumin, paprika, salt, and pepper; cook for 1 minute until fragrant.
Add diced tomatoes, tomato sauce, kidney beans, macaroni, and beef broth. Stir to combine.
Bring to a boil, then reduce heat to low, cover, and simmer for 12-15 minutes, stirring occasionally, until macaroni is tender.
Remove from heat and sprinkle cheddar cheese over the top. Cover and let stand for 2 minutes until cheese melts. Serve hot.
Tips
Adjust chili powder to taste for more or less heat.
Leftovers can be refrigerated for up to 3 days; add a splash of broth when reheating.
