Ingredients
500g boneless chicken thighs, cut into bite-sized pieces
1/2 cup plain yogurt
2 tablespoons tikka masala paste
1 tablespoon lemon juice
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon salt
4 large flour tortillas
1 cup shredded lettuce
1 medium red onion, thinly sliced
1 medium tomato, diced
1/2 cup cucumber, diced
1/4 cup fresh cilantro, chopped
1/2 cup plain yogurt (for sauce)
1 tablespoon mint chutney
Instructions
In a bowl, combine yogurt, tikka masala paste, lemon juice, cumin, paprika, and salt. Add chicken pieces and mix well. Marinate for at least 30 minutes (or overnight).
Preheat grill or oven to 200°C (400°F). Thread chicken onto skewers (or place on a baking sheet). Cook for 12-15 minutes, turning once, until charred and cooked through. Let rest for 5 minutes, then remove from skewers.
In a small bowl, mix 1/2 cup yogurt with mint chutney to make the sauce.
Warm tortillas in a dry skillet or microwave for 10 seconds each.
Assemble wraps: Spread a spoonful of yogurt sauce on each tortilla. Top with lettuce, onion, tomato, cucumber, and chicken. Sprinkle with cilantro.
Fold in the sides of the tortilla, then roll tightly from the bottom. Cut in half and serve.
Tips
For extra flavor, add a squeeze of lime juice before serving.
Wraps can be made ahead and stored in the fridge; reheat in a pan or microwave.
Substitute chicken with paneer for a vegetarian version.
