Ingredients
1 lb chicken skin (from thighs or breasts)
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder (optional)
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Rinse chicken skin and pat dry with paper towels. Trim any excess fat if desired.
Lay skin flat on the baking sheet in a single layer, not overlapping. Season with salt, pepper, and garlic powder.
Bake for 20-25 minutes, rotating the pan halfway through, until golden brown and crispy. Keep an eye on them to prevent burning.
Remove from oven and let cool on the baking sheet for 5 minutes; they will crisp up further as they cool.
Break into chip-sized pieces and serve immediately or store in an airtight container.
Tips
Store in an airtight container at room temperature for up to 3 days.
Re-crisp in a 350°F oven for 3-5 minutes if they lose crunch.
Sprinkle with smoked paprika or cayenne for extra flavor.
Use rendered fat (schmaltz) for roasting potatoes or sautéing vegetables.
