4 boneless skinless chicken breasts (about 6 oz each)
1 cup all-purpose flour
2 large eggs
1 cup panko breadcrumbs
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
4 hamburger buns
4 leaves lettuce
4 slices tomato
4 tablespoons mayonnaise
4 large potatoes (for fries)
2 tablespoons vegetable oil (for fries)
4 dill pickle spears
Vegetable oil for frying (about 2 cups)
Instructions
Preheat oven to 200°F to keep cooked items warm. For fries: cut potatoes into thin strips, toss with 2 tbsp oil and salt, spread on baking sheet. Bake at 425°F for 20-25 minutes, turning halfway.
Meanwhile, prepare chicken: place each chicken breast between plastic wrap and pound to 1/2-inch thickness. Season with salt and pepper.
Set up breading station: flour in shallow dish; beat eggs in second dish; mix panko, garlic powder, paprika, salt, and pepper in third dish.
Dredge each chicken piece in flour, then egg, then panko mixture, pressing to adhere.
In a large skillet, heat 1/2 inch oil over medium-high heat until shimmering. Fry chicken in batches, 3-4 minutes per side until golden and cooked through (internal temp 165°F). Drain on paper towels.
Toast buns in a dry skillet or oven until lightly golden. Spread mayonnaise on bottom buns, top with lettuce, tomato, chicken, and top bun.
Serve sandwiches with fries and pickle spears.
Tips
For extra crunch, use buttermilk in the egg wash.
