Ingredients
2 cups cooked chicken, shredded
1/2 cup mayonnaise
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup celery, finely diced
1/4 cup red onion, finely diced
2 tablespoons fresh parsley, chopped
4 large croissants, split
4 leaves lettuce
Instructions
In a medium bowl, combine mayonnaise, lemon juice, salt, and pepper.
Add shredded chicken, celery, red onion, and parsley. Mix until well combined.
Adjust seasoning to taste.
Split croissants and place a lettuce leaf on the bottom half.
