Ingredients
1 lb boneless skinless chicken breasts, cut into bite-sized pieces
1/2 cup all-purpose flour
1/2 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1 tsp garlic powder
1 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
2 large eggs, beaten
2 tbsp olive oil
4 large flour tortillas (10-inch)
1 cup shredded lettuce
1 large tomato, diced
1/2 cup ranch dressing or your favorite sauce
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a shallow bowl, mix flour, panko, Parmesan, garlic powder, paprika, salt, and pepper.
Dip chicken pieces into beaten eggs, then coat with the breadcrumb mixture. Place on prepared baking sheet.
Drizzle olive oil over the chicken nuggets. Bake for 12-15 minutes, flipping halfway, until golden and cooked through (internal temperature 165°F).
Warm tortillas in a dry skillet or microwave for about 20 seconds.
To assemble: place a handful of lettuce and diced tomato down the center of each tortilla. Top with chicken nuggets and drizzle with ranch dressing.
Fold in the sides of the tortilla, then roll up tightly from the bottom. Cut in half diagonally and serve.
Tips
Use chicken tenders instead of breasts for even quicker prep.
Leftover nuggets can be stored in the fridge for up to 3 days; reheat in oven or air fryer.
Swap ranch for honey mustard, BBQ sauce, or buffalo sauce for variety.
