Ingredients
12 frozen chicken nuggets
4 large flour tortillas
1 cup shredded Mexican blend cheese
2 tablespoons butter, softened
Optional: salsa, sour cream, guacamole for serving
Instructions
Cook chicken nuggets according to package directions until crispy. Let cool slightly, then cut each nugget in half.
Spread a thin layer of butter on one side of each tortilla. Place two tortillas butter-side down on a large skillet or griddle over medium heat.
Evenly sprinkle half the cheese on each tortilla, then arrange half the chicken nugget pieces on top of the cheese. Top with remaining cheese and place the remaining tortillas on top, butter-side up.
Cook until the bottom is golden brown and cheese starts to melt, about 2-3 minutes. Carefully flip each quesadilla and cook until the other side is golden brown and cheese is fully melted, another 2-3 minutes.
Remove from skillet, let cool for a minute, then cut into wedges. Serve with salsa, sour cream, or guacamole if desired.
Tips
For extra flavor, add sliced jalapeños or cooked bacon along with the chicken.
Use a panini press for a quicker, evenly pressed quesadilla.
Store leftover quesadillas in the fridge and reheat in a skillet or oven to keep them crispy.
